The small seed like fruit pods of the Ajwan plant are used as a spice in Indian cooking. Ajwan is mainly used for potatoes and lentils, although it can be good for any root vegetable dish and fish. It is used in curry powder mixed specifically for vegetables and lentils, as well as in Indian breads like parathas and pooris, and Indian appetizers such as pakoras.

Before using Ajwan seeds, crush them to release the flavor by rubbing them together with your finger tips. Add a pinch to rice as it is cooking, for aroma and flavor.

Ayurvedic constitution: Helpful for pacifying Vata and Kapha, and increases Pitta.

Magical Powers: A folk remedy for impotence has ajwan seeds soaked in lemon juice then dried 7 times over. The consumption of the treated seeds is said to stimulate flagging libidos.

Folk names: Ajwain, Ajowan, Bishops Weed, Carom, or Ethiopian Cumin

Specific uses: Ajwan contains thymol, which is a germicide and antiseptic, and is valued in Ayurvedic cuisine for its medicinal uses to comfort symptoms of diarrhea, colic, flatulence, asthma and indigestion. It helps expel wind and mucus. The seeds are often boiled in water and this liquid is given to treat upset stomachs, flatulence and low appetite. It is also helpful for the functioning of the respiratory system and the kidneys.
